 Ingredients:

For the Cookies:

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

  • 1 ¾ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt

  • ½ cup powdered sugar
  • 1–2 tbsp lemon juice

 Instructions:

1. Preheat & Prepare:

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Make the Dough:

  • In a bowl, cream together butter and sugar until light and fluffy (about 2–3 minutes).
  • Beat in egg, vanilla extract, lemon zest, and lemon juice.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Slowly mix dry ingredients into the wet ingredients until just combined.
  • Gently fold in blueberries—try not to overmix.

3. Scoop & Bake:

  • Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.
  • Bake for 11–13 minutes, until the edges are just set and the centers are soft but not raw.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

4. Add Glaze (Optional):
