These Cinnamon Maple Baked Apples are stuffed with a lightly spiced oat filling and drizzled with pure maple syrup, creating a simple dessert that feels like a hug in a bowl.  Ingredients:

  • 4 large apples (like Honeycrisp, Fuji, or Gala)
  • ¼ cup rolled oats
  • 2 tbsp chopped walnuts or pecans (optional)
  • 2 tbsp unsalted butter, softened
  • 2 tbsp maple syrup (plus extra for drizzling)
  • 1½ tsp ground cinnamon
  • ¼ tsp nutmeg (optional)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: raisins or dried cranberries (1–2 tbsp)

 Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C). Lightly grease a small baking dish.

2. Core the Apples:

  • Wash the apples and slice off the top ½ inch.
  • Use a spoon or apple corer to carefully scoop out the cores, creating a well in each apple, but leave the bottoms intact.

3. Make the Filling:

  • In a bowl, mix oats, softened butter, maple syrup, cinnamon, nutmeg, vanilla, salt, and nuts (if using). Add raisins or dried fruit if desired.

4. Stuff & Bake:

  • Spoon the filling into each apple.
  • Place apples in the prepared baking dish and drizzle with a little extra maple syrup.
  • Add ¼ cup of water to the bottom of the dish to prevent burning and help steam the apples.
  • Cover loosely with foil and bake for 25 minutes.
  • Remove foil and bake another 15–20 minutes, or until apples are soft and golden.

5. Serve Warm:

  • Drizzle with more maple syrup if desired.
