Ingredients:
- 1½ lbs baby potatoes (Yukon gold or red)
- 3 tbsp olive oil
- 1 tsp garlic powder or 2 cloves minced garlic
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried rosemary or thyme (optional)
- ¼ cup grated Parmesan (optional, for extra crisp)
- Fresh parsley, for garnish
Instructions:
1. Boil the Potatoes:
- Place whole baby potatoes in a pot of salted water.
- Bring to a boil and cook for 15–20 minutes until fork-tender.
- Drain and let cool slightly.
2. Smash Gently:
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Place potatoes on the sheet and use the bottom of a glass or potato masher to gently flatten each one, about ½-inch thick.
3. Season & Roast:
- Drizzle olive oil over smashed potatoes.
- Sprinkle with garlic, salt, pepper, herbs, and Parmesan if using.
- Roast for 25–30 minutes, flipping halfway, until deeply golden and crispy.
4. Garnish & Serve:
- Sprinkle with fresh parsley before serving.
- Serve hot with sour cream, ranch, aioli, or your favorite dip.
Variations:
- Add chili flakes for a spicy version
