Easy Raspberry Crumble Bars

Ingredients:

For the Crust & Crumble:

  • 1 cup (2 sticks) unsalted butter, melted

  • ¾ to 1 cup raspberry jam or preserves (seedless if preferred)

Instructions:

1. Prep the Oven & Pan:

  • Preheat your oven to 350°F (175°C).
  • Line an 8×8-inch or 9×9-inch square baking pan with parchment paper, leaving some overhang on the sides for easy lifting.

2. Make the Crust & Crumble:

  • In a mixing bowl, combine the melted butter, sugar, vanilla extract, flour, baking powder, and salt.
  • Stir until a crumbly dough forms. It should resemble wet sand but hold together when pressed.

3. Press the Crust:

  • Set aside about ¾ to 1 cup of the dough mixture for the crumble topping.
  • Press the remaining dough evenly into the bottom of the prepared pan to form the crust.

4. Add the Raspberry Layer:

  • Spread the raspberry jam evenly over the crust. If using lemon juice, mix it into the jam first.
  • Crumble the reserved dough over the top, pinching some into larger clumps for texture.

5. Bake:

  • Bake in the preheated oven for 30–35 minutes, or until the top is lightly golden and the filling is bubbly.
  • Let cool completely in the pan, then lift out using the parchment and slice into bars.

Storage:

  • Store at room temperature in an airtight container for up to 3 days, or refrigerate for up to a week. Bars also freeze well for longer storage.
