 Ingredients:

For the Chicken Marinade:

  • 1.5 lbs (700g) chicken (bone-in pieces preferred)
  • ¾ cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric
  • 1 ½ tsp red chili powder
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • Juice of ½ lemon
  • Salt to taste

For the Rice:

  • 2 cups basmati rice
  • 1 bay leaf
  • 4–5 whole cloves
  • 3 green cardamom pods
  • 1 small cinnamon stick
  • Salt to taste

For Assembly:

  • 2 medium onions, thinly sliced
  • 2 tbsp ghee or oil
  • ¼ cup chopped cilantro
  • ¼ cup chopped mint leaves
  • A few strands of saffron soaked in 2 tbsp warm milk
  • Optional: 2 boiled eggs for garnish

 Instructions:

1. Marinate the Chicken:

  • Mix all marinade ingredients in a large bowl. Add chicken and coat well.
  • Cover and marinate in the fridge for at least 1 hour (overnight is best).

2. Prepare the Rice:

  • Rinse and soak basmati rice for 30 minutes.
  • In a large pot, bring water to a boil with salt and whole spices.
  • Add rice and cook until 70% done (grains should still have a bite). Drain and set aside.

3. Cook the Chicken:

  • In a deep pan, heat 2 tbsp oil or ghee.
  • Fry sliced onions until golden and crisp. Remove half for layering.
  • Add the marinated chicken to the pan with the remaining onions.
  • Cook on medium heat until chicken is almost done and oil starts to separate (10–12 mins).

4. Layer the Biryani:

  • Lower the heat. Spread half the rice over the chicken.
  • Sprinkle with mint, cilantro, half the fried onions, and half the saffron milk.
  • Repeat with the remaining rice, herbs, fried onions, and saffron milk.

5. Dum (Steam Cook):

  • Cover the pan with foil or a tight lid.
  • Cook on low heat for 20–25 minutes. Let it rest 10 minutes before serving.

 Serving Suggestions:

  • Serve hot with cucumber raita, salad, and lemon wedges.
  • Garnish with boiled eggs or fried cashews for extra richness.
