 Instructions:

1. Activate the Yeast:

  • In a bowl, mix warm water, yeast, and honey. Let sit for 5–10 minutes until frothy.

2. Make the Dough:

  • In a large mixing bowl, combine flour and salt.
  • Add yeast mixture and olive oil. Mix until a sticky dough forms.
  • Knead by hand or with a dough hook for 5–7 minutes until smooth and elastic.

3. First Rise:

  • Transfer dough to a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled in size.

4. Shape the Focaccia:

  • Grease a 9×13-inch pan with olive oil.
  • Transfer the dough to the pan and stretch it gently to the edges.
  • Cover and let rise again for 30–45 minutes.

5. Prepare Topping:

  • In a small bowl, mix olive oil, garlic, and herbs.

6. Dimple & Top:

  • Preheat oven to 425°F (220°C).
  • Use your fingers to create deep dimples all over the dough.
  • Drizzle garlic oil over the top, sprinkle with Parmesan and flaky salt.

7. Bake:
