- 1 tbsp lime juice
- ½ tsp grated fresh ginger
- ¼ tsp ground cumin

- Salt to taste
- 1 tsp olive oil
Instructions:
1. Sauté Aromatics:
- Heat olive oil in a saucepan over medium heat.
- Add red onion and jalapeños. Sauté for 2–3 minutes until softened.
2. Add Pineapple & Spices:
- Stir in the chopped pineapple, ginger, cumin, chili flakes (if using), and a pinch of salt.
- Cook for another 3–4 minutes until the pineapple starts to release juice.
3. Simmer with Vinegar & Sugar:
- Add apple cider vinegar, brown sugar, and lime juice.
- Reduce heat and simmer uncovered for 10–15 minutes, stirring occasionally, until thickened and jammy.
4. Cool & Store:
- Taste and adjust seasoning.
- Let cool, then transfer to a clean jar.
- Store in the refrigerator for up to 2 weeks.
